The Breakfast Effect: How Eggflation Is Plaguing Colorado Restaurants

The cost of breakfast has nearly doubled since early 2020 due to the roller-coaster cost of eggs at Colorado restaurants. Inflation is killing business’ profitability, and the story can be told through the menu pricing of a beloved local diner, as illustrated in the infographic below:
